  • Aeration: Aeration is the process of introducing air into a substance, and it is a pretty important part of making ice cream and gelato. When you whip air into your base, you add volume to your finished creation. Churned gelato typically has less aeration than ice cream, giving it its signature dense texture, while ice cream has a fluffier consistency.
